What is it?
The most tasty coated snack has to be the nugget. Especially if they’re plant-based, they are even more tasty. At least these nuggets are.
The central innovation lies in the white colour of the “meat” part, as well as still having a very neutral flavour, similar to chicken. Even though the coating provides a nice and crunchy bite, the inside has a very meaty texture. All of this of course completely plant-based.
TOP's role
The development of the chicken nugget has not been so straightforward. In this development process, TOP had to take inspiration from other previously developed products.
Luckily, eventually a unique binding mix was developed that combined with the advanced emulsion technology could be transformed into the plant-based nuggets.
Nothing was left to chance, the carefully chosen ingredients resulted in a very neutral flavour, without any plant off-flavours. Now, combine this with a great coating and you have a delicious plant-based nugget.
